Chocolate chip banana bread muffins for some monday morning soul medicine ☀️ just my usual muffin recipe, but I swapped blueberries for chocolate chips!
2 spotty bananas
1/2 cup oats
1/3 cup nut butter (I used cashew)
1/4 cup almond meal
1/4 cup maple syrup OR 6 pitted dates
1 tbsp flax + 3 tbsp water, mixed together
1 tsp vanilla
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 cup chocolate chips
METHOD: -Preheat oven to 375F.
-Let the flax and water sit for about 5 minutes until it’s a gel-like consistency.
-In a blender or food processor, combine all ingredients EXCEPT the chocolate until smooth. Fold in the chocolate and stir until they’re well incorporated. -Pour batter into a nonstick muffin pan, filling about 2/3 of the way (they won’t rise much).
-Bake for 14-18 minutes, or until golden. Let them sit for 20 minutes! They may feel soft when you take them out, but they’ll firm up as they cool. They’ll last for a week, but I doubt they will 🤤 3305 ♡ 111 ✍

I gave my old recipe a makeover, this time making it naturally sweetened with dates. It’s smooth, creamy and meant to be eaten by the spoonful, not for baking! You heard me!
1 can chickpeas (rinsed, drained and peeled. Peeling is very important for an extra smooth texture!)
10 medjool dates, pitted
1/4 cup nut butter
2 tbsp dairy free milk
1/2 tbsp vanilla
Pinch of salt
Pinch of baking soda
Vegan chocolate chips
If you have time, soak the dates in warm water for an hour. If you don’t, just run them under hot water for a minute. Throw everything except the choc in a food processor until it’s really smooth, then transfer to a bowl and fold in the chocolate chips. Keep refrigerated! Will be good for a week but I’d bet lots of sweet potatoes that it won’t last just long ⭐️ 3300 ♡ 111 ✍

BEHOLD: a vegan sandwich bigger than my face -- including cashew cheddar cheese, avocado, tomato, greens, spicy mayo and veg ham. I don't usually go for mock meats (I'd rather just have a well-done veggie dish with loads of sweet potatoes 🍠), but this sandwich rocked my world. I got it from @orchardgrocer, an all vegan grocer in NYC.. it’s overwhelming to go into a market and be able to eat literally every single item in the store 🤣 I ordered this crazy, cruelty-free sammy through @seamless, which was perfect because I had just gotten home from yoga (hangry), and was running out the door to the next thing, so I just placed the order on my way home. One of my March intentions was to choose an affirmation everyday based on what I needed for that specific time. Affirmations are conscious statements you make to yourself because just like your body responds to every negative, unconscious thought (i'm not good enough, that was so dumb of me, blah blah), the vibration of a positive affirmation is just as powerful. It all goes along with the belief that energy flows where attention goes. Even though I had set out to have a different one for each day, I find that I've been sticking to the same one lately: "I trust the process." I'm someone who likes to know what to expect (always look at menus beforehand, watch the movie trailers, read the back of the book, i looked for jobs way before they were even posted). If I don't have my sh!t together, I create a plan to get more organized and stay motivated. So, working on surrendering myself to the unknown and to time itself was a daunting concept to grasp, and still can be at times. But I've come to the realization that that's also the exciting part of life, because if we knew how everything was going to pan out, that's like knowing how the movie is going to end every single time 😴 For now, I'll just keep going with the flow, and attracting things into my life that feed my goals, and watch them transform into magic. Gooey fudgy chocolate brownies topped with creamy caramel just in time for the weekend ✨ These babies are... *breath* vegan (duh), gluten-free, nut-free and naturally sweetened! So what TF is in them, you ask? Not many ingredients... just some whole ingredients that will make you feel your best. One of the few ingredients is tahini- but you can't taste it at all, so it's the perfect recipe for those of you who want to incorporate more tahini into your diet but don't like the taste. March is kinda funky 🌀 not quite spring, not really winter. I feel like we slip into cruise control without even remembering that we can hit the brakes and slow down at any point. Last night when I was setting my intentions for this coming month, it made me realize how little I’ve looked inwards in the past few weeks. I’ve established a comforting routine that makes me feel secure and safe, but leaves me unable to face what I’ve been feeling.. so here are some points of personal growth I want to work on this coming month:
✨replace fearful, irrational thoughts with ones that bring me back to reality. ✨repeat and let the following phrase sink in: everything is temporary.
✨choose a different affirmation every day that helps me with whatever I need.
✨complain less. I consider myself to be a positive and upbeat person, but complaints are often internal and serve as background noise in our minds.

I prefer pancakes that look like birthday cake 🍰 🎀 I wasn’t a fan of buckwheat until these pancakes came into my life... fluffy, pillowy pancakes smothered in @lovvelavva blueberry yogurt, topped with peanut butter and served with a side of berries. Happy hump day! 🐫 2340 ♡ 68 ✍
Adulthood: making stir-fry for dinner every single week. And I'm not complaining when it looks like this 🤤 I make pad thai or some sort of noodle dish when I'm craving a home cooked meal, but still want the flavors and feeling of takeout. No matter what type of noodle, rice or veggies I'm throwing into the pot, I always make the same sauce! I'm not tryna make life more complicated than it needs to be:
✨1/4 cup soy sauce
✨1/4 cup maple syrup
✨1 tbsp water
✨1 tbsp rice vinegar ✨2 tsp garlic cloves
✨1 tsp finely minced ginger
✨1/2 tsp chili garlic sauce
To create a thicker sauce, stir in a tablespoon of tapioca starch - it'll create a gel-like consistency that's in a lot of stir fry dishes. I hope you incorporate this as much as I do ☺️ 2527 ♡ 53 ✍
When people think about veganism, the first thought is often about food. But what you use on the outside of your body is another crucial part of the cruelty free equation. It’s been INCREDIBLE seeing some major mainstream beauty brands give up animal testing. If you guys have been watching my stories, you know that I’ve been using @ethiqueusa products lately, a New Zealand brand (@ethiquenz) that is just now moving to the US. Vegan, cruelty-free, woman-owned, and each bar is packed with soothing oils. My personal favorite has been the solid shampoo and conditioner (the top and bottom bar in the picture.) All of their stuff smells so sweet and yummy, I’ve contemplated taking a bite out of it.
Plus, no plastic bottles is a double whammy (in a good way) for the environment, and 10000x easier to travel with. Created this funky lookin sweet potato creature 🐙🐍🦑 three types - japanese, purple and normal sweet potatoes dipped in homemade guacamole with crunchy sesame seeds. For the potatoes, just cut em up into fries, toss with spices of your choice and bake at 425F for 40ish minutes, flipping halfway. Happy FRY-DAY!!!! 1802 ♡ 61 ✍
